Squid with Bell Pepper in Chili and Garlic Sauce (Lee Kum Kee)




Ingredients:

1/2 kilo Squid
2 pcs. big Red and Green Bell Pepper cubes
Onion cubes
Garlic minced
Chili and Garlic Sauce (Lee Kum Kee)
Salt and Pepper
Canola Oil


Procedure:

Clean and Prepare Squid... 

* remove the squid head from the body
* harvest squid ink sac
* remove the squid beak (yung nasa ulo)
* remove tail tube and cartilage (yung matigas na parang plastic)
* remove skin from squid body
* cut squid ring


In a pan: 

Add 2 tbs. Canola Oil 
saute' Garlic until brown
add cleaned Squid rings and the head... stir
add 1 tbs. Lee Kum Kee Chili and Garlic Sauce
simmer for 2 minutes... 
then add the Onion and Red or Green Bell Pepper

lastly, Salt and Pepper to taste


Pwedeng ulamin... pwede din pulutan!

Mixed Vegetables with Shrimps and Quail Eggs




Ingredients:
1 medium pack Mixed Vegetable(bought from the grocery or you can make your own)
1 dozen Quail Eggs, shelled
1/4 kilo Shrimp, peeled off
Onion finely chopped 
Garlic finely chopped
Salt and Pepper
1/2 Butter


Procedure:

In a pan... melt butter
saute' garlic and onion
add shrimps
set stove in low fire and simmer for 3 minutes or wait until shrimps are cooked 
add mixed vegetable... stir occasionally
add salt and pepper to taste...
then add the quail eggs

cover for 2 minutes and it's ready to serve!

Tokwa't Baboy in Tausi




Ingredients:
1/2 kilo Liempo
2 packs Tofu (mas ok kung yung nabibili sa grocery)
1 small pack Tausi (Ram)
Kinchay/ Celery chopped
Onion diced
Garlic chopped
Soy sauce
Vinegar
Salt and Pepper
Canola Oil


Procedure:
In a pan... boil Liempo until tender
slice evenly then put in a bowl 

In a frying pan... put oil then fry Tofu until brown and crispy
slice evenly then put in a bowl

In another pan: (masyado bang maraming pan... hahaha)

saute' garlic and onion
add liempo... then stir
add  2 tbs. soy sauce... then stir
add 2 tbs. vinegar... do not stir
then add fried tofu and tausi... and stir
add 1/2 cup water
salt and pepper to taste and a pinch of sugar 
add kinchay leaves

then cover for 3 minutes and it's DONE!

Sugpo in Sweet Lemon Sauce

Ingredients:

1/2 kilo Sugpo or Suahe
1 big lemon
1 sprite
1 McCormick garlic
1 cup brown sugar
salt and pepper
1/2 butter

Procedure:

wash sugpo/suahe
take off the bigote 
(i'm sure you guys know what i mean here, ayt? :D)

In a bowl:

place sugpo/suahe
add 1 cup sprite, sugar and a little of McCormick garlic
squeeze lemon (make sure to take off the seeds)
salt and pepper to taste

In a pan:

melt butter
then add sugpo/suahe till orange
take off the sugpo/suahe from the pan... set aside
allow juice in the pan to thicken a little
when the juice is a bit thick, 
then you can put it on top of the sugpo/suahe and it's done!

Pwede ulamin, papakin or pulutan!

Pocherong Pata





Ingredients:

1 1/2 kilo pata ng baboy sliced
1 can hunt's pork and beans
1 tomato sauce
2 pcs. kamote cubes
4 pcs. saging na saba (slanting)
1/4 lbs. green string beans
1 head cabbage
1/2 cup sugar
onion chopped
garlic finely chopped
salt and pepper
canola oil

Procedure:

place pata in a casserole with water and bring to boil until meat is tender
when meat is tender, take out of the casserole and set aside
place broth of the meat from the casserole in a bowl
set aside for a while.....

In a frying pan:

fry kamote, saba, string beans and cabbage
(make it brown a little)
then set aside for a while....

In a sauce pan: 

add canola oil, saute' garlic, onion and  pata, stir....
add hunt's pork and beans
add tomato sauce
add fried kamote and saba
season with salt and pepper
add the sugar
add pata broth... stir
cover and simmer for 3-5 minutes so the flavors can mix
lastly, add string beans and  cabbage
then cover for 1 minute and it's done!


This recipe is one of my brother Bobhey's masterpieces... ginaya ko lang! ending,  MAS masarap daw yung luto ko... hahaha! Enjoy cooking everyone!

Chicken Pastel





Ingredients:

1 kilo chicken (any part will do or 1 whole) cut into small serving  pieces
1 big evaporated milk
1 nestle cream
1 small box quickmelt cheese, grated
2 medium potatoes, cut into cubes
1 medium carrots, cut into cubes
2 big red and green pepper, sliced thinly 
2 celery stem, sliced (slanting)
2 cups chicken broth 
onion chopped
garlic chopped finely
salt and pepper
1/2 butter

Procedure:

Brown garlic in butter, 
add onion and chicken... stir for 2 minutes
add chicken broth, cover and simmer for 10 minutes
then add the potatoes, carrots and bell pepper
season with salt and pepper

cover the pan...
when the chicken is almost done, 
add the evaporated milk... stir for 1 to 2 minutes
add grated quickmelt cheese to thicken the sauce
stir then add the celery 

Serve Hot! Yummy!

Adobong ubod ng Sarap :p




Ingredients:

1 kilo pork kasim (adobo cut) or chicken
1/3 cup soy sauce
1/2 cup vinegar
3 pieces bay leaves/laurel
1 teaspoon peppercorn
1/4 cup sugar
garlic finely chopped
canola oil

Procedure:

In a bowl, MIX all the ingredients except the canola oil

In a pan, pre-heat the canola oil...
then add the mixed ingredients minus the sauce...

set aside the sauce for a while

fry the mixed ingredients until meat is tender and brown...
add the sauce you set aside,
add 1 to 2 cups of water, depending on the tenderness of the meat
cover the pan, simmer for 15-20 minutes



stir occasionally... check from time to time...
when the juice is absorbed, add another cup of water 
cover and simmer until meat becomes tender and all the juice is absorbed
you will know it is cooked when the water turns into oil...
(meaning, nagmantika na sya! hehehe)

you can also add hard boiled eggs if you want!
