Squid with Bell Pepper in Chili and Garlic Sauce (Lee Kum Kee)




Ingredients:

1/2 kilo Squid
2 pcs. big Red and Green Bell Pepper cubes
Onion cubes
Garlic minced
Chili and Garlic Sauce (Lee Kum Kee)
Salt and Pepper
Canola Oil


Procedure:

Clean and Prepare Squid... 

* remove the squid head from the body
* harvest squid ink sac
* remove the squid beak (yung nasa ulo)
* remove tail tube and cartilage (yung matigas na parang plastic)
* remove skin from squid body
* cut squid ring


In a pan: 

Add 2 tbs. Canola Oil 
saute' Garlic until brown
add cleaned Squid rings and the head... stir
add 1 tbs. Lee Kum Kee Chili and Garlic Sauce
simmer for 2 minutes... 
then add the Onion and Red or Green Bell Pepper

lastly, Salt and Pepper to taste


Pwedeng ulamin... pwede din pulutan!

Mixed Vegetables with Shrimps and Quail Eggs




Ingredients:
1 medium pack Mixed Vegetable(bought from the grocery or you can make your own)
1 dozen Quail Eggs, shelled
1/4 kilo Shrimp, peeled off
Onion finely chopped 
Garlic finely chopped
Salt and Pepper
1/2 Butter


Procedure:

In a pan... melt butter
saute' garlic and onion
add shrimps
set stove in low fire and simmer for 3 minutes or wait until shrimps are cooked 
add mixed vegetable... stir occasionally
add salt and pepper to taste...
then add the quail eggs

cover for 2 minutes and it's ready to serve!

Tokwa't Baboy in Tausi




Ingredients:
1/2 kilo Liempo
2 packs Tofu (mas ok kung yung nabibili sa grocery)
1 small pack Tausi (Ram)
Kinchay/ Celery chopped
Onion diced
Garlic chopped
Soy sauce
Vinegar
Salt and Pepper
Canola Oil


Procedure:
In a pan... boil Liempo until tender
slice evenly then put in a bowl 

In a frying pan... put oil then fry Tofu until brown and crispy
slice evenly then put in a bowl

In another pan: (masyado bang maraming pan... hahaha)

saute' garlic and onion
add liempo... then stir
add  2 tbs. soy sauce... then stir
add 2 tbs. vinegar... do not stir
then add fried tofu and tausi... and stir
add 1/2 cup water
salt and pepper to taste and a pinch of sugar 
add kinchay leaves

then cover for 3 minutes and it's DONE!

Sugpo in Sweet Lemon Sauce

Ingredients:

1/2 kilo Sugpo or Suahe
1 big lemon
1 sprite
1 McCormick garlic
1 cup brown sugar
salt and pepper
1/2 butter

Procedure:

wash sugpo/suahe
take off the bigote 
(i'm sure you guys know what i mean here, ayt? :D)

In a bowl:

place sugpo/suahe
add 1 cup sprite, sugar and a little of McCormick garlic
squeeze lemon (make sure to take off the seeds)
salt and pepper to taste

In a pan:

melt butter
then add sugpo/suahe till orange
take off the sugpo/suahe from the pan... set aside
allow juice in the pan to thicken a little
when the juice is a bit thick, 
then you can put it on top of the sugpo/suahe and it's done!

Pwede ulamin, papakin or pulutan!

Pocherong Pata





Ingredients:

1 1/2 kilo pata ng baboy sliced
1 can hunt's pork and beans
1 tomato sauce
2 pcs. kamote cubes
4 pcs. saging na saba (slanting)
1/4 lbs. green string beans
1 head cabbage
1/2 cup sugar
onion chopped
garlic finely chopped
salt and pepper
canola oil

Procedure:

place pata in a casserole with water and bring to boil until meat is tender
when meat is tender, take out of the casserole and set aside
place broth of the meat from the casserole in a bowl
set aside for a while.....

In a frying pan:

fry kamote, saba, string beans and cabbage
(make it brown a little)
then set aside for a while....

In a sauce pan: 

add canola oil, saute' garlic, onion and  pata, stir....
add hunt's pork and beans
add tomato sauce
add fried kamote and saba
season with salt and pepper
add the sugar
add pata broth... stir
cover and simmer for 3-5 minutes so the flavors can mix
lastly, add string beans and  cabbage
then cover for 1 minute and it's done!


This recipe is one of my brother Bobhey's masterpieces... ginaya ko lang! ending,  MAS masarap daw yung luto ko... hahaha! Enjoy cooking everyone!

Chicken Pastel





Ingredients:

1 kilo chicken (any part will do or 1 whole) cut into small serving  pieces
1 big evaporated milk
1 nestle cream
1 small box quickmelt cheese, grated
2 medium potatoes, cut into cubes
1 medium carrots, cut into cubes
2 big red and green pepper, sliced thinly 
2 celery stem, sliced (slanting)
2 cups chicken broth 
onion chopped
garlic chopped finely
salt and pepper
1/2 butter

Procedure:

Brown garlic in butter, 
add onion and chicken... stir for 2 minutes
add chicken broth, cover and simmer for 10 minutes
then add the potatoes, carrots and bell pepper
season with salt and pepper

cover the pan...
when the chicken is almost done, 
add the evaporated milk... stir for 1 to 2 minutes
add grated quickmelt cheese to thicken the sauce
stir then add the celery 

Serve Hot! Yummy!

Adobong ubod ng Sarap :p




Ingredients:

1 kilo pork kasim (adobo cut) or chicken
1/3 cup soy sauce
1/2 cup vinegar
3 pieces bay leaves/laurel
1 teaspoon peppercorn
1/4 cup sugar
garlic finely chopped
canola oil

Procedure:

In a bowl, MIX all the ingredients except the canola oil

In a pan, pre-heat the canola oil...
then add the mixed ingredients minus the sauce...

set aside the sauce for a while

fry the mixed ingredients until meat is tender and brown...
add the sauce you set aside,
add 1 to 2 cups of water, depending on the tenderness of the meat
cover the pan, simmer for 15-20 minutes



stir occasionally... check from time to time...
when the juice is absorbed, add another cup of water 
cover and simmer until meat becomes tender and all the juice is absorbed
you will know it is cooked when the water turns into oil...
(meaning, nagmantika na sya! hehehe)

you can also add hard boiled eggs if you want!

Ampalaya con Karne

Ingredients:

ampalaya
beef strips or ground beef
garlic minced
onion chopped
oyster sauce
soy sauce
salt and pepper
vegetable oil

Procedure:

slice ampalaya (slanting)
place ampalaya slice into the bowl and put hot water
drain the hot water then put salt and squash ampalaya
(not too hard so that the ampalaya slice will still look firm)
set aside for a while...

In a pan:

put some vegetable oil, saute' garlic and onion
add beef strips or ground beef
add 1/2 cup of water
simmer for 3-5 minutes until beef is tender
add a bit of soy sauce... stir
add ampalaya sliced
add salt and pepper to taste
add oyster sauce... stir
(adding egg is optional)

cover the pan for 2-3 minutes and it's done!

Pinakbet sa Gata with Litson Kawali on Top

  Mga Sangkap:

1/2 pork liempo
bagoong alamang
kalabasa
talong
okra
sitaw
ampalaya
sibuyas
kamatis
bawang
mantika
1 can/ pack coconut milk

Paraan ng pagluto sa Litson kawali:

ilagay ang liempo sa kaserola
lagyan ng tubig at asin
pakuluin hanggang lumambot ang liempo
kapag malambot na, salain ang liempo at palamigin
at kapag malamig na ang liempo...
i-lubog sa mainit na mantika... takpan
paminsan-minsan tignan para hindi masunog

Paraan ng pagluto sa Gulay::

lagyan ng mantika ang kaserola, 
igisa ang bawang, sibuyas at kamatis
ilagay ang bagoong alamang
haluin hanggang maluto ang bagoong
ilagay ang kalabasa, takpan ng 1 minuto
isunod ilagay ang talong, ampalaya, sitaw at okra
lagyan ng 1/2 cup na tubig... haluin
huling ilagay ang gata/coconut milk
takpan ng 1-2 minuto (sa mahinang apoy)


kapag luto na ang gulay... ilagay sa ibabaw ang litson kawali at pwede na ihain!

Baked Macaroni


Ingredients:

450 gm. elbow macaroni
1/2 kilo ground beef
purefoods hotdog sliced
sweet ham (optional)
tomato sauce
garlic minced
onion chopped
1 pack quickmelt cheese grated
1 can evaporated milk
salt and pepper
parsley chopped
butter

Procedure:

Cook pasta according to package directions
in a saucepan, melt butter and saute' garlic, onion
add ground beef, salt and pepper then simmer for 3 minutes until cooked
add hotdog/ham.... stir.....
then add tomato sauce and 1/2 cup sugar... stir....
allow mixture to simmer for another 5-10 minutes (in a low fire)

Sauce Toppings:

In a separate small pan
place butter, evaporated milk and grated quickmelt cheese
add salt and pepper to taste... stir occasionally

toss noodles with prepared sauce... place in an oven proof baking dish
then  add the sauce toppings on top... 
if you want it cheesier, sprinkle with grated cheese on top (optional)
bake at 180 *C pre-heated oven for 15-20 minutes or until cheese melts 
sprinkle chopped parsley on top

Best serve with Garlic Bread

Sirloin Strips with Mushroom in Butter Sauce



Ingredients:

1/2 sirloin strips
1 can champignon mushroom (pieces and stems)
worcestershire sauce (mas masarap kung Lea and Perrins)
knorr seasoning
garlic minced
onion diced
red and green bell pepper strips
salt and pepper
butter

Mix in a bowl:

sirloin strips 
knorr seasoning 
worcestershire sauce 
salt and pepper....... Set aside for a while.

Procedure:

In a pan, add 1/4 butter... saute' garlic and onion
add sirloin strips, salt and pepper... and stir 
add 3 cups of water
cover the pan and let it simmer for 15-20 minutes
allow sirloin to cook, in low fire...stir occasionally
uncover and check if the sirloin is dry 
add the champignon,
then add the red and green bell pepper.... 
stir then cover for 3 minutes

In a separate small pan

melt 1/2 butter, add 1 tbs. sugar... 
stir until the sauce is a bit thick.

add the sauce and the sirloin together and it's done!

My children's favorite... and mine too!

Laing ni Aling Shiela

 Ingredients:

1 plastic gabi leaves dried and shredded 
(may nabibili sa grocery na dried and sheredded na)
1/4 kilo pork diced
garlic minced
onion diced
ginger sliced
jalapeno pepper (siling haba/siling pang-sigang) sliced
2 cups of coconut milk
1 cup of coconut cream (kakang gata)
vegetable, canola or cooking oil (whichever you prefer)

Procedure: 

place the pork in a pan with water, allow to cook until pork is tender and dry,
add oil, garlic, onion, ginger and jalapeno pepper... then stir...
mix in the gabi leaves
pour in the coconut milk then simmer for 3-5 minutes
add salt and a bit of sugar to taste (sugar is optional)
then add the coconut cream... 
continue to simmer until oils come out of the cream 

Serve with Hot Rice... Enjoy!

Ground Beef with whole kernel Corn

Ingredients:

1/2 ground beef
1 can whole kernel corn 
soy sauce
knorr seasoning
onion
garlic
butter

Procedure:

saute' garlic and onion in 1/2 butter, 
add ground beef (let it simmer for 2 mins.)
add a bit of soy sauce and knorr seasoning

stir until ground beef is cooked
then add the whole kernel corn
add salt and pepper to taste... and it's done!

Serve Hot! Pwede din pambaon for your chikitings!

Sweet and Spicy Chicken Wings




MIX in a bowl
1 kilo of Chicken Wings

1 tsp. Garlic and Chili Sauce
1 Egg
Cornstarch, Salt, Pepper 
then DEEP FRY... Set Aside for a while.

Saute' garlic (use olive oil or butter)
add a bit of tomato sauce
add a bit of water,
add Oyster sauce (optional)

Salt and Pepper to taste

Sugar-  about 1-2 tsp. or depending on how you want it, para sa mga bata, mas ok kung may tamis ng konti…

Italian seasoning, this will give a different flavor (meron sa sm or puregold)

When the sauce is a bit thick, add the deep fried chicken together until it is coated and it's done. If you want it spicy, you can add siling labuyo or chili sauce.

Garnish with spring onion leaves
